Deviled Eggs
Sep. 4th, 2011 06:56 pmMy mom asked for this while we were in North Carolina. Since it's one of the few recipes of my own devising that I've ever bothered to actually measure and write out, I thought I'd share here, too.

Deviled Eggs by Request (aka 'The Zippy Ones')
1 dozen eggs, boiled and peeled
3 tablespoons prepared spicy brown mustard such as Gulden's (fairly level, not heaping)
4 to 5 tablespoons mayo (just slightly more than 1/4 cup)
1 teaspoon white vinegar
1/4 teaspoon dill weed
1/4 teaspoon onion powder
salt and pepper
Slice each egg in half lengthwise,and separate the yolk from the white.
Add mustard, mayo, vinegar, dill weed and onion powder to reserved yolks. Blend until smooth. Add salt and pepper to taste, and stir. (For zippier eggs, you can increase the vinegar, dill, and mustard.)
Stuff egg whites with yolk mixture. If desired, garnish with paprika. Chill until ready to serve.
Also note: I've been told that the left-over yolk mixture made a great dip or sandwich spread.
